Chicken Vegetable Stir Fry
Servings: 4
Ingredients:
2 Chicken Breasts
5 Garlic Cloves
4 Tbs. Olive Oil
1 Red Onion Diced
½ Orange Bell Pepper
½ Red Bell Pepper
½ Yellow Bell Pepper
½ Green Bell Pepper
5 Rainbow Carrots Sliced
2 Cups Broccoli
2 Cups Snow Peas
1 Bottle General Tso’s Sauce
1 Box Long Grain Wild Rice


Directions:
Step One:
Dice chicken into pieces and fry on medium heat with Olive Oil and Minced Garlic.  Fry until chicken is fully cooked.
Step Two:
Add peppers and onion to frying pan cook until tender.  Then add the rest of the vegetables and General Tso’s Sauce.  Cover with lid to simmer until vegetables are tender.
Step Three:
Cook rice following directions on box.  I love using my Instant Pot to cook my rice perfectly every time.
Step Four:
Serve on plate with rice and then vegetables on top.

 To start all of my colorful vegetables and other ingredients lined up on the cutting board.  I love cooking with as much color as I can to enhance the nutritional value and flavor of the dish.
Rainbow Carrots
Rainbow carrots are typically found in the organic area of the produce area in the grocery store.  I prefer rainbow carrots because each color contains a difference vitamin and mineral to benefit your body.  Our local Weis Markets has finally started carrying the large carrots in the rainbow colors, in the past they only had the baby carrots.  This week I planted rainbow carrots in my garden and can't wait to see how they turn out and cook with them! All foods are higher in nutritional content when they are grown locally verses shipped in produce.  This is because they are allowed to ripen fully before being picked which allows more vitamins and minerals to be produced.
Long Grain Wild Rice Cooked in Instant Pot for 15 mintues
I recently won an 8 quart Instant Pot at a conference I was attending.  At first I was a little afraid of using it be after reading all the directions I loved it so much I ordered the 3 quarts on to make my rice in while I cooked my meats and vegetables in the larger one.  On the box for the rice it says it will take 40 minutes to cook on the stove top.  In the Instant Pot it only took 15 minutes to have perfectly cooked rice.  My favorite part is I can just add the rice and water, hit start and not have to worry about doing anything else to it until it is done.

Stir Fry is on of my favorite meal prep meals. It contains to many colorful vegetables that vary in vitamin and mineral content. Plus you can choose any type of sauce you want to easily change it up a little bit. I personally like the General Tso's sauce for mine.
